| New Latah Bistro Classes
Join Heather Black-DuPree, owner of Latah Bistro, for the Tastes of Tuscany cooking classes every Sunday from 12 to 3 p.m. The classes feature recipes from Siena, Italy where Black-Dupree recently took classes herself. "Heather's style incorporated a passion for food with stories, trivia and traditional cooking knowledge," the Duprees said in a news release. Future classes will include Latah Bistro Chef David Blaine and other chefs from the restaurant. The restaurant is closed so students use the kitchen and dining room for the private classes. When they arrive they'll meet other students, put on an apron and then start cooking. Recipes will be provided along with wine to sip and appetizers. At the end of the night, the group sits down to the three-course meal they made that night.

Scandinavian cooking to warm a winter home
Ask the average American about Scandinavian cuisine and they may mention lutefisk—if they mention anything at all. Luckily, a beautiful new reprint of "Kitchen of Light: New Scandinavian Cooking" (Artisan, $24.95) is on bookstore shelves now, painting a delicious picture of food from the north. Author Andreas Viestad also hosts the PBS program "New Scandinavian Cooking With Andreas Viestad," and he used his deep knowledge of cooking to pack the volume with many amazing recipes. Even better, he often focuses on ingredients not as common in American kitchens. To supplement a couple of chicken recipes, he has other dishes that highlight squab and grouse. And for every beef dish, there are scrumptious recipes calling for goat, lamb and venison. And of course, there are plenty of meals centered on the fruit of the sea.

A campfire. A long stick. Trout toasting over the flames. You can picture it, can't you? But cooking trout on a stick isn't likely to win too many fans, says John Head. "Most people don't like game birds, game in general, and game fish, because they haven't been introduced to the right ways of cooking it," he says. Head is going to show people how to tackle fish and game at the 2008 Denver International Sportsmen's Exposition. A local barbecue restaurant consultant and culinary instructor, Head teaches classes through the Culinary Institute of Smoke Cooking, founded by his former in-laws in the '90s (bbqcookingschool.com). At the expo, he'll be cooking up some recipes for food "that people don't cook very well as a rule." And perhaps persuade a few more people to take another look at game.
