Taste of Home Cooking School invites you to come to the the Douglas high School auditorium on Wednesday, November 14, when The Daily Dispatch hosts anevening demonstration of "Great Gatherings". The only coast to coast traveling cooking show in the country, Taste of Home Cooking School's nine culinary specialists are ready to stir up a cornucopia of vibrant fall recipes. Packing spatulas, spoons and seemingly all but the kitchen sink in her van, each culinary specialist will drive hundreds of miles to share preparation tips, plating techniques and palate-pleasing meals.Come harvest ideas for your next gathering as Culinary Specialist Jamie Dunn blends ingredients to create a selection of recipes for both small get-togethers and large celebrations. We know people who come to our cooking schools love to cook and love to eat great food, so every recipe prepared on stage will be given away at the end of the demonstration.Dunn will begin the show with Bountiful Brunch Gatherings.
Letting kids help in the kitchen may hone useful life skills
My son doesn't know who Emeril Lagasse or Wolfgang Puck are, but he is a budding chef nonetheless. It began about a year ago, when 2-year-old Charlie climbed up onto a chair to "help" me cook. Because he was more prone to spill than stir, I gave him his own cooking supplies -- measuring cups and bowls filled with Cheerios and dry oatmeal. He entertained himself by scooping, pouring and mixing until I could get my own recipe into the oven. That became one of his favorite activities, and since then his culinary capabilities have improved. Now, he won't settle for his own stash of ingredients. He wants to break the egg shells -- with one hand -- when I make brownies. He likes to pour the pancake batter onto the griddle. He wants to toss the salad and brown the ground beef on taco night.

Rolling out meatballs from three countries
The world is your meatball. So many different cultures make and enjoy some form of spherical ground-meat treat. Here are samples from three different countries. Though they are a Shanghai specialty, lion's head meatballs are beloved in Hong Kong and on the banquet menus of Cantonese restaurants. The chef may make one giant meatball, said to resemble the head of a lion with a cabbage mane floating around it. More commonly, medium-size individual meatballs are served one to a customer in bowls with broth and cabbage. This recipe is from the bilingual "Pei Mei's Chinese Cookbook, Vol. II" by Taiwan TV cooking show host Fu Pei Mei, published in Taiwan in the 1970s. The preferred cabbage for use in this dish is Shanghai cabbage, also called Chinese cabbage and sometimes mislabeled as bok choy; it's the one with the jade green stalks, not the white (the white is bok choy, aka pak choy).

He said: "We did try before and they didn't give us permission for a second chef. "I don't know why they do it. Indian restaurants are always short of staff. Language is a problem but most of my staff speak Bengali. We do want to get the staff from India who can cook the food properly and know about the spices. "It's a problem everywhere. I know a few restaurant owners who are struggling to provide authentic cuisine because they don't have a good chef. "They did give us permission a couple of years ago and a lot of people came, but still we need more people." The nationwide issue was sparked by the pressure group the Immigration Advisory Service (IAS) which said the rules restrict people allowed a visa to educated people who can speak English.
The History of Chinese Imperial Food
Westerners eat more meat while Chinese eat more vegetables, especially the traditional cereals. (Cereals are said to have been discovered by Shen Nong, the chief of the ancestors of remote antiquity.) China began growing the five cereals as food crops during the Zhou Dynasty. The Zhou Dynasty was the most prosperous period of the slave society, and during this time politics, economics and culture advanced greatly. It was the strongest of the three slave dynasties: Xia, Shang and Zhou. The imperial cuisine of the Zhou Dynasty was a great improvement over the cuisines of the Xia and Shang dynasties. Beginning with the construction of the Xia Dynasty palace and the establishment of the imperial court, an organization was set up to prepare and serve food to the emperor and empress.

He said that it's probably because he's black that he roots for the underdog. Me. I don't look at it that way; I don't believe that all convicted adult felons are underdogs. Plus, I have always felt for the person who just had their car stolen, or was mugged or raped or even killed. Those are the ones I feel sorry for. And I guess even though Leon and I approach our jobs in pretty much the same way, which is rule enforcer first, someone to talk to second, the inmates must pick up on this philosophical difference somehow. It's amazing how they can do that. Like the last time we came out of a staff meeting after having just decided to initiate a surprise room-to-room search for contraband. When we got upstairs most everybody was in their rooms organizing things, cleaning up, and I'm sure, tossing an item or two out the window into the alley.
